Ingredients
- 1 lb. ground beef
- 1 can pinto beans
- 1 can black beans
- ½ a yellow onion, diced
- ½ c frozen corn
- ⅔ c canned pumpkin
- 1 can chili ready tomatoes
- 1 tbsp. garlic
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 1 tsp. red pepper (optional-makes it spicier)
- ½ tsp. salt
- ½ tsp. black pepper
- optional: shredded cheese, plain greek yogurt, and tortilla chips
Preparation
- In a large fry pan, brown the hamburger (if you want it healthier use ground turkey)
- Now that it is browned, place it in the crockpot.
- Add the rest of the ingredients to the crockpot, stir them all together.
- Cook for 4-6 hrs.
- Serve Warm with a sprinkle of cheese, dollop of plain greek yogurt on top and a side tortilla chips (optional)
