Garlic Cheddar Chicken Bake

Ingredients

  • 2tablespoons butter, melted
  • 1/2cup Progresso™ plain panko crispy bread crumbs
  • 1package (14 oz) chicken tenders (not breaded), cut into bite-size pieces
  • 1cup uncooked regular long-grain white rice
  • 1teaspoon salt
  • 1/4teaspoon pepper
  • 1/4teaspoon garlic powder
  • 2 1/2cups Progresso™ chicken stock (from 32-oz carton)
  • 2cups shredded Cheddar cheese (8 oz)
  • Chopped fresh Italian (flat-leaf) parsley, if desired

Steps

  1. Heat oven to 375°F. Spray 8-inch square baking dish with cooking spray.
  2. Mix melted butter and bread crumbs in small bowl until well mixed. Set aside.
  3. In baking dish, mix chicken, rice, pepper, salt, garlic powder, chicken stock and 1 1/2 cups of the cheese till well mixed.
  4. Bake for 45 to 50 minutes until rice is tender and most of the liquid is absorbed.
  5. Sprinkle remaining 1/2 cup cheese and the bread crumb mixture equally over rice mixture.
  6. Bake for about 5 minutes until crumbs are light golden brown. Sprinkle with chopped parsley.
