INGREDIENTS
6 slices fruit bread, chopped
1/3 cup brown sugar
1/3 cup desiccated coconut
1/2 teaspoon mixed spice
400g can sliced pie apples
410g can sliced peaches, drained
1 cup thick vanilla custard
40g butter, finely chopped
Icing sugar mixture, for dusting
Honey, caramel and macadamia ice-cream, to serve
METHOD
Step 1
Preheat oven to 200C/180C fan-forced. Grease a 2-litre (8-cup-capacity) rectangular roasting dish.
Step 2
Process bread in a food processor until coarse breadcrumbs form. Add sugar, coconut and mixed spice. Process for 10 seconds or until combined.
Step 3
Sprinkle 1/2 the breadcrumbs over base of prepared dish. Top with apples and peaches. Dollop spoonfuls of custard evenly over fruit. Sprinkle with remaining breadcrumbs. Scatter evenly with butter.
Step 4
Bake for 25 to 30 minutes or until breadcrumbs are crisp and golden. Dust with icing sugar. Serve with ice-cream.
