INGREDIENTS
- 1 pkg. (12 oz. / 340 g) DOLE® Chop Chop Confetti Blend
- 1 Granny Smith apple, cored and sliced
- 1/2 cup (113 g) DOLE® Pitted Dates, chopped
- 1/2 cup (113 g) walnuts, toasted and chopped
- 1/2 cup (113 g) DOLE Red Onion, chopped
- 2 oz. (57 g) Brie cheese, chopped
- Apple Dijon Vinaigrette (recipe below)
- Salt and ground black pepper, to taste
DRESSING
Apple Dijon Vinaigrette:
- Combine 1/2 cup (125 mL) apple jelly, 1/4 cup (60 mL) apple cider vinegar, 1/4 cup (60 mL) canola oil, 2 teaspoons (10 mL) Dijon mustard, 1 clove garlic, and 1/8 teaspoon (0.5 mL) cayenne pepper in blender. Cover; blend until smooth. Makes about 1 cup (250 mL).
DIRECTIONS
- Combine salad, apple, dates, walnuts, onion and Brie in large bowl. Toss with Apple Dijon Vinaigrette, until coated as desired. Season with salt and pepper, to taste.
