EASY TOMATO SOUP

Ingredients
4 tablespoons unsalted butter
1/2 large white onion , cut into wedges
1 (28 oz) can whole tomatoes, undrained
2 cups chicken stock (or water)
2 cloves garlic , minced
1 teaspoon kosher salt
pinch of sugar
(optional toppings) grated parmesan, fresh basil

Instructions
In a large pot, melt the butter and add the rest of the ingredients (besides the toppings).
Bring to a boil then reduce heat to simmer uncovered for 30-40 minutes or until the onions are soft.
Blend until smooth in a blender or with an immersion blender. Eat plain (also wonderful) or garnish with parmesan and basil.
Recipe Notes
I’ve made this with water and chicken stock. The chicken stock gives it a little fuller flavor but the water is also good.
