Smoked Salmon, Feta and Avocado Salad

Ingredients

  • 7 ounces nitrate-free smoked salmon, sliced
  • 1/2 lemon, juice
  • 1 avocado, peeled and diced
  • 6 ounces arugula
  • 3 ounces feta, diced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt

Directions

  1. Squeeze the lemon on the smoked salmon. Set aside.
  2. On the serving plate, distribute the smoked salmon, avocado, rucola and feta.
  3. In a small bowl, mix the balsamic vinegar, extra virgin olive oil and salt then pour it on the salad.
