Chickpea Cucumber Salad

Ingredients

  • 1 large cucumber (peel if preferred), diced
  • 1 (15-ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar or white balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup chopped mint, parsley, or dill
  • 1/2 cup grape or cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Combine the honey, olive oil, vinegar, and salt, and pepper in the bottom of a large bowl. Add the other ingredients and toss to coat.
