Ingredients
Salad

- 6 cups chopped or baby mixed salad greens of choice
- 1 green bell pepper, stemmed, seeded, and chopped
- 1 cup jarred, canned (no sweetener), or fresh mandarin or tangerine slices
- 1 cup (half pint) halved cherry tomatoes
- 1/4 cup sliced almonds
- 1/2 cup thawed or fresh edamame, optional
Dressing
- 2 tablespoons fresh-squeezed lemon juice or red wine vinegar
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon kosher or sea salt
- 1/4 teaspoon black pepper
Directions
- Whisk together oregano, red wine vinegar, dijon mustard, salt, and pepper. Slowly drizzle in olive oil, whisking while pouring.
- Toss all salad ingredients together in a large salad bowl.
- Add salad dressing and toss or serve on the side.
